FRITTATA

(Serves 2)

4 tb spoon olive oil

7 eggs: 4 egg white’s only and 3 whole egg

1 tablespoon cold water

7 white mushrooms-thinly sliced

1 cup capsicum (finely chopped ½ green, 1/2 red &1/2 yellow capsicum)

1ounce spinach (as per your likings)

4 baby corns chopped finely

8 cherry tomatoes-cut in half (you can use normal tomatoes as well)

3 Garlic cloves chopped finely

Hand full of parsley leaves

Hand full of lemon grass

Pinch of nutmeg powder

1 teaspoon of black pepper

Salt to taste: I prefer black salt

4 ounces of cheese

PROCEDURE

· Beat the eggs in a bowl.

· In a Pan (big) heat olive oil+ garlic+ lemon grass, till garlic’s are brown.

· Now add Mushrooms+ nut meg+ black pepper and sauté it till light brown.

· Add parsley +capsicums + baby corn to the mushrooms, sauté it till half cooked (appx 3 minutes-medium flame)

· Add spinach to this and sauté for 2 minutes (medium flame)

· Now take out the lemon grass pieces from the mixture.

· Add this to the bowl containing egg.

· Add cheese to the egg + salt to taste (remember cheese is salted so don’t over add salt), mix.

· Pour oil in the same pan and spread it evenly, now add the mixture to the pan.

· Distribute the ingredient evenly in pan and let it heat for 5-6 minutes.

· Try and loosen the edges with spatula then flip the frittata and cook.

· Serve it with bread and cheese garnish.

Fruits & Soy-paneer salad (serves 3)

I am usually not someone who enjoys her time in kitchen but now that I don’t have any work I thought I should cook often …and umm I don’t want to be modest here…but whenever I cook somehow I love what turns out of it : delicious food..(ummm almost always!! ;))...thank god I inherited this from my mom…she is a lovely cook….:)…and she definitely would be proud of me for getting my butt into the kitchen!! MOM Here’s your little girl starting her married life with some amazing experimental food!! Love ya.

Here’s the first recipe I am posting from my kitchen wohooo…..

PS. I believe in healthy living…. So all my recipes are a healthy choiceJ

1) Fruits & Soy-paneer salad (serves 3)

I usually love eating something light for dinner so this one is an amazingly healthy salad for your soul!!

You need:

For Main salad-

Olive oil- 2 table spoon

Soya nuggets-15 pieces

Cottage Cheese (Paneer) - chopped (amount depends on you)

Capsicums (shimla mirch) - Red and yellow- half of red and half of yellow- chopped in small squares (you could use green capsicum if you want)

Pomegranate (anar)-1 fruit

Apple- half an apple

Grapes- chopped in thin slices (I used Australian grapes because of their big size)

Cherry tomatoes-8 of them sliced into half

Salad leaf-green and purple ones chopped coarsely

Lemon grass- for flavor (I used 8 pieces of 3inches each - chopped lemon grass)

For dressing-

Olive oil- about 4 teaspoon

Garlic cloves- about 4 of them chopped

Basil leaves (tulsi) or Parsley leaves (Whichever you may prefer-I used parsley): Coarsely chopped

Lemon juice- 4 table spoon(approx 3 lemons)

Black pepper-1 teaspoon

Salt to taste- I prefer black salt

Vinegar- 2 teaspoon

PS:

- If you don’t have fruits to sweeten the salad then you could add 1 teaspoon sugar in the dressing.

- You could use the same dressing with different vegetables of your choice in salad.

PROCEDURE

1) MAIN SALAD PREPARATION

In a pan add olive oil, add lemon grass pieces, sauté it on low flame till lemon grass changes its original color to pale brown now add paneer to it, sauté till paneer becomes a little golden but still is soft, now add Soya nuggets (pre boiled), sauté for 2 minutes and add capsicum +black pepper +salt to taste cook till capsicum are half raw now add cherry tomatoes into it, cook for a minute(make sure veggies are still raw and not over cooked) and pour it into the mixing ball. Let it cool till room temperature and then add fruits and salad leaf .Mix well

2) DRESSING PREPARATION

In a pan add olive oil and chopped garlic cloves-sauté it till garlic turn brown and the flavor is strong. Now add parsley+ black pepper +little salt into it sauté it on low flame for 2 minutes+ lemon juice mix well.

3) MIXING SALAD AND DRESSING

Add the dressing to the salad in mixing bowl and add vinegar +blackpepper +salt if needed. Mix well and garnish it with coriander leaves.
